Thin crust, thick crust, or deep dish. That's the phrase you almost hear when ordering a pizza over the phone. Today is the day we salute and honor the deep dish pizza! Chicago- style pizza is a deep-dish pizza style developed in Chicago . Chicago-style pizza has a buttery crust up to three inches tall at the edge, slightly higher than the ingredients, which include large amounts of cheese and chunky tomato sauce, acting as a large bowl. The term also refers to "stuffed" pizza, another Chicago style. It's usually eaten with a knife and fork.

The research I did for Yakima shows that most of the pizza chains and independent pizzerias and take and bakes in town do offer a deep dish, or stuffed pizza. The style will vary with each restaurant.

Being a long time Yakima resident, I remember the "Chicago Connection" in Downtown Yakima. This restaurant was owned by the DiPietro family of advertising agency fame, and was, I believe, the first place in Yakima to offer a true Chicago-style pizza. I remember that they had a unique neon mural in the restaurant, depicting boats sailing on Lake Michigan off Lakeshore Drive. And the pizza was great!
