Tales from the Scale: Turn Up the Beet
Update: These are not turnips, they are rainbow beets and now you know my secret. I get excited and don't even pay attention to the details!
Who knew! I would be one of those people, smashing beets, like it was a boiled potato and getting people hyped. Yet here we are :)
About a week ago I joined an accountability group, with work-outs and meal plans, paid for so I can focus but real talk, I'm snacking and last Thursday I received a surprise boozing so I spent the weekend drinking because that's how this works, right?
I'm not losing weight but not gaining AS MUCH since attempting accountability so I took the before picture but not the measurements, the excuse is I don't have a measuring tape, also I'm not the prime example of how Barre Blend is supposed to work! Either way, I love it. After four days, I tackled cleaning the house like a beast so I know the work-out is a keeper and I get to pretend I'm a ballerina.
I'm still fighting the good fight with Pacific Northwest Fresh Boxes. So many delicious veggies to get through and since the beets arrived they've been staring at me every time I open the fridge. What am I supposed to do with you?"
So in the spirit of procrastination let's talk about Garlic Scape Pesto first.
Those fun medusa wig looking garlic scapes are young garlic pulled to help the rest flourish and they have been really fun to mess with. You can grill them, saute them, chop them up for stock I bet, and after seeing a recipe or two and then having a TikTok video pop into my feed for garlic scape pesto I just had to try it.
Ingredients for Garlic Scape Pesto:
5 or 6 rinsed and chopped garlic scapes (I learned the hard way)
2 Tablespoons of walnuts (substitute nut) toasted for 5 or 6 minutes and set aside to cool
2 Tablespoons of Parmesan (omit if you don't want dairy)
1/2 cup olive oil and possibly more for creaminess
The juice of a mini lemon or half of a larger lemon and the zest if you like
A handful of greens, I used arugula but I bet spinach would be a great addition plus it's good for you
salt and pepper to taste

However many beets you are interested in using, I had four to work with
Parmesan
Olive oil
Salt and pepper
Garlic
