    Chocolate Mint Sugar Cookies

    Submitted by Darcy Armstrong

Mix together 1 1/2 cups butter, 2 cups of sugar and 1 tbsp. of Cream of Tartar ~ add to mixture 4 eggs and 2 tsp. mint extract. Blend together 4 1/2 to 5 cups of flour,1 cup of cocoa,1 tbsp. of baking powder, and 2 tsp. salt. Gradually add flour mixture to remaining ingredients. When mixed together, form into two discs and refrigerate for two hours. Roll out on floured surface (I like to add cocoa to the flour when rolling out dough) ~ Cut into desired shapes and place on parchment lined cookie sheets. Bake at 350 degrees for approximately 9 minutes. Let cool before frosting/icing and frost/ice with your favorite topping! Enjoy!!
