Cinco de Mayo…Let’s Eat!
I’m going to share my easy recipe for Pico de Gallo in time for Cinco de Mayo! Hey, that rhymes!
An easy recipe that is full of fresh flavor. My oldest daughter loves it.
3 large roma tomatoes, seeded and chopped
6 medium size jalapeno peppers, seeded and minced
1 medium white onion, chopped
1 small bunch cilantro, chopped
garlic salt and black pepper to taste.
Now, here’s my secret method for some good heat: Take the juice of two large limes, and place that in a blender along with 1 medium habanero pepper, seeds and all. Liquify and pour into the chopped vegetables. Mix well and let stand in fridge to let flavors blend.
Serve with tortilla chips and a cold beer. Enjoy!
